You can track a Market Maker by double clicking on the Market Maker in the Details section of the Level II window. The Market Maker will change color based on the color setting in the Properties dialog window.

Below you can see that the Market Maker UBSS is being tracked.

You can also see the list of tracked Market Makers via  the right mouse button click menu "Tracked Market Makers" sub menu.
